1、将买来的螺蛳放入清水中养一到两天。水中可放少许香油,这有助于螺蛳快速吐尽脏东西。

2、刷干净螺蛳表面的青苔、污垢,这个部分有点难去除。可用钢丝球擦(一两块钱就可买到)。

3、将刷干净的螺蛳剪去“小尾巴”,并加入少许香油与食盐养一到两小时。后再将螺蛳用清水冲洗干净沥干。

4、锅里加入香油,油热后加入洗净并切碎的生姜、辣椒、大蒜头的等爆香。后倒入准备好的螺蛳翻炒。此间倒入适量老抽、生抽、盐、两小勺糖、适量料酒

5、加入清水,使水刚好没过螺蛳。放入五香八角。大火烧约二十分钟,不要盖锅盖,待其收汁后即可。
